How to make a WFPB no oil vegan egg is what I will be sharing with you today. This recipe was inspired by @EdgyVeg It is a WFPB version of JUST EGG no tofu!! This version is a healthy, WFPB, and no oil. Very easy to make. Of course this recipe is starch solution compliant. Here is what you will need to make this WFPB no oil vegan egg. Ingredients: 1 cup of yellow split mung beans soaked over night 1 cup unsweetened soy milk 1 tsp black salt 1/2 tsp salt 1/2 tsp turmeric 1/2 tsp garlic powder 1/2 tsp onion powder 1 tsp baking powder 2 T nutritional yeast 1 tsp. tapioca starch (optional) pepper to taste 1/4 cup chopped onion 1/4 bell pepper 3 mushrooms sliced 1/4 cup chopped tomatoes handful of chopped spinach Instructions: Drain the mung beans and rinse well. Add to a blender with the next 9 ingredients and blend well. Heat a non-stick skillet over medium heat and add 1/4 cup of water and add veggies, Saute for 4-5 minutes. Then add the egg mixture and start to move it around scraping the bottom of the skillet. when it just starts to look like it's scrambling cover for 2 minutes. Then move the mixture around again and cook for another 2 minutes. Then add tomatoes and spinach and mix it in to the egg mixture, cover and cook for 1 more minute.
