Jam-Filled Bread Rolls. ✨ Ingredients (makes 2 large loaves) Tangzhong (starter paste): • 120 ml water • 120 ml milk • 40 g plain flour (about 2 tbsp) Dough: • 130 ml warm milk • 10 g dry yeast • 100 g caster sugar (5 tbsp) • 1 egg • Tangzhong (from above) • 60 g soft unsalted butter • 1 tsp ground cardamom • 450 g plain flour (plus up to 80 g extra for kneading) • ½ tsp salt • Zest of 1 lemon Filling: • 250 g apple jam For the glaze: • 1 egg yolk • 1 tbsp milk ⸻ 🥣 Method 1. Make the Tangzhong In a small saucepan, whisk together the milk, water, and flour. Cook over medium heat, stirring constantly, until the mixture thickens to a smooth, pudding-like paste. Leave to cool completely. 2. Prepare the Dough In a large mixing bowl, place 450 g of flour and make a well in the centre. Add the sugar, warm milk and yeast. Cover and let sit for 10 minutes until the yeast activates. Add the egg, cooled tangzhong, cardamom, lemon zest, and salt. Mix well. Add the softened butter and knead, sprinkling in the remaining flour as needed, until the dough becomes soft and elastic. Cover and leave to rise in a warm place for 1–1.5 hours. 3. Shape the Rolls Punch down the dough, roll it into a square, and cut into 6 equal strips. Place a spoonful of jam in the centre of each, then roll into long ropes. Brush two of the ropes with egg yolk and coat generously with sesame seeds. Form into loaves as shown in the video. Cover and let rest for another 30 minutes. 4. Bake Bake in a preheated oven at 180–205°C for 25–30 minutes, until golden and fragrant. (Baking time may vary depending on your oven.) ⸻ ✨ The result?
