Iron goddess of mercy Whatever name you want to use, it is a classic oolong with a roasty taste..this is roasted and makes a lovely golden, coppery colored infusion. You can simply steep it for 4 minutes, and repeat 3 minutes on subsequent steeps, or use a gaiwan and do shorter, repeat infusions as many times as you enjoy. This is a Taiwanese Ti Kuan Yin, about mid oxidation level for an oolong and roasted to bring out the lovely toasty, chestnut-y notes and aroma. Chinese cultivars were brought to Taiwan and Taiwan has been known as having some of the best oolongs in the world, like this one. Bagged and loose tea are about the same cost, approximately .26 to .30 cents per 8 oz. serving. The big difference is the taste. And you can never properly infuse oolongs like this in bags or sachets..they need room to 'relax' and unwind. I hope you enjoyed this video on Ti Kuan Yin.
