No yeast, no mixer, no bread machine - just pure flavor and texture. 🧾 Ingredients (for 6 buns): Preferment: Lievito Madre starter – 7 g Water – 90 ml Bread flour – 75 g Dough: All of the preferment Bread flour – 145 g Whole wheat flour – 145 g Lactose-free milk – 100 ml Sugar – 35 g Lactose-free butter – 50 g Olive oil – 50 g 1 egg yolk + 1 extra yolk for brushing Salt – 6 g Sesame seeds 🍞 Recipe: 1️⃣ Mix the Lievito Madre starter, water, and flour. Cover and ferment for 12 hours at 22–23°C until bubbly. 2️⃣ Combine sugar, butter, and olive oil. Mix until smooth, add a yolk, and whisk until creamy. 3️⃣ In another bowl, dissolve the preferment in milk and add the butter–sugar–yolk mixture. Add both flours and salt, and mix until all flour is hydrated. 4️⃣ Knead briefly, cover, and rest for 30 minutes. 5️⃣ Knead by hand for 10–15 minutes until smooth and elastic. Let rise for 5 hours at 22–23°C. 6️⃣ Divide into 6 pieces (about 100 g each), round them, cover, and rest 15 minutes. 7️⃣ Shape into balls, place on parchment, cover, and proof 1–2 hours in warmth. 8️⃣ Brush with yolk–milk mix, sprinkle with sesame, and bake at 200°C for 25–30 minutes. 9️⃣ Cool completely before slicing.
