Peshawari Charasi Chicken Curry: This Chicken is famous for its smoky aroma, usually cooked in an iron kadhaai over high flame. If you love authentic North-West frontier flavours, this recipe is an absolute must-try. Ingredients and method: 1. In a preferably iron kadhaai heat 300 gms. Oil and fry 1 Kg. Chicken pieces. 2. Add 1.5 Tspoon salt and 1 Tspoon black pepper powder. 3. Fry for 10-12 minutes. 4. Cover and cook for 5 minutes. 5. After 5 minutes, open the lid and add 500 gms. Red ripe whole tomatoes. You can add half cut tomatoes.m 6. cover and cook for 10-12 minutes. 7. After 12 minutes open the lid 8. Add some goat fat. (Optional) 9. Simmer for 10 minutes. 10. Peel the skin of tomatoes. Skin will be easily removed. 11. Mash tomatoes. 12. add 10 green chillies whole (Slitted) 13. Add 10-15 garlic cloves. 14. Cook for 5 minutes keeping kadhaai open. 15. Add 1 Tspoon Garam masala powder. 16. Cover the lid and cook for 10 minutes on low flame. 17. Open the lid and take out excess oil. 18. Peshawari Charasi Chicken is ready. 19. To make it more exotic, cut 2 onions, 2 tomatoes and 1 capsicum (Simla mirch) into petals. 20. In an another frypan heat the oil which we took out from chicken 21. Add onion tomatoes capsicum petals . 22. Add 1 Tspoon salt and 1 Tspoon black pepper powder. 23. Add 3-4 red chillies and a few garlic cloves. Sauté for 2-3 minutes. 24. Cover the lid and simmer for 3 minutes. 25. Please don’t overcook. Keep it crunchy. 26. In a plate spread this onion tomato capsicum and over it charasi Chicken. 27.
