Pulse until very smooth. Place a griddle pan over medium heat do not use high heat as you want pancakes to be golden brown. Once hot, add coconut oil. Use a ¼ cup measure to add batter per pancake onto the greased griddle. Cook for 2-3 minutes, until you see air bubbles and edges are set, then flip. Cook another 2-3 minutes, until golden and fluffy.
