This will prevent them from burning. Add the vinegar, water, and sugar to a saucepan and bring to a boil. Remove from heat, put the carrot and cucumber in a jar, and pour over the pickling liquid. Cover with a lid and refrigerate until cold. Place a saucepan over high heat. Add in the rice, water, salt and optional aromatics. Mix to combine to prevent clumps and bring to a boil. Place on a lid, reduce the heat to low and cook for 12 minutes. Turn off the heat, leave the lid on for 4 minutes, and then remove the aromatics and fluff with a fork. Set aside until ready to serve. Add all the bang bang sauce ingredients to a bowl and combine. Divide the sauce into two bowls. Set 1 bowl aside for serving. Don’t use this bowl to cook the chicken. Add all the chicken and seasoning ingredients to a bowl and combine. Thread onto soaked wooden skewers. Brush half of the reserved bang bang sauce over the chicken, place it in the air fryer set at 200.c -390.f, and cook for 8 minutes. Remove the chicken and brush over the remaining bang bang sauce. Air fry for 6-8 minutes or until the chicken is cooked. Serve all the elements of the dish across 5x 750ml containers. Starting with the rice, bang bang chicken that can be removed from the skewers, top with pickled carrot, cucumber, and avocado. Garnish with black and white sesame seeds and the reserved bang bang sauce. Dig in. Store in the fridge for 3-4 days and in the freezer for up to 3 months.
