Katori chat...Chaats, the most loved and popular Indian street food which doesn’t need any introduction. There are so many different types of chats available in India. Katori chat is one of them. It is a baked/deep fried bowl filled with potatoes, sprout stuffings, topped with tangy and spicy chutneys. I have used a mini tart mold to give a Katori shape. These savory bowls make your mouth watery. And also, you can make them a few days ahead and store them in an airtight container. Ingredients for Basket: ------------------------------------ All-purpose flour - 1 cup Salt to taste Oil - 1 tbsp Oil for deep frying Ingredients for stuffing: ------------------------------------- Potatoes (boiled) - 4 Kala channa (boiled) - 1 tbsp Sprouted beans - 1 tbsp Salt Chilli powder - 1 tsp Ingredients for garnishing: ----------------------------------------- Onions Tomatoes Yogurt / Curd Mint chutney Tamarind Chutney Coriander leaves Sev Chilli powder Chaat masala Steps: --------- 1. In a mixing bowl, add flour, salt, and oil and combine well until it gets crumbled texture. 2. Now, add water in batches and knead the flour until it becomes a soft dough. Cover with a lid and rest the dough for 20mins. 3. Wash, peel, and boil the potatoes in a pressure cooker until 2 whistles( don't boil them for too long). 4. Meanwhile, in a separate bowl, add the boiled potatoes. Mash them well. 5. Now, one by one add all the ingredients of the stuffing. Combine well and keep aside. 6. After 20mins, knead the dough once again. Take a small portion of the dough and make it into ball-shaped ones. 7. Roll one portion of the dough into a thin-sized circle. 8. Now, Greece tart mold with oil. Stick the rolled dough onto the bottom of the mold. 9. Gently press the sides to make sure that the dough doesn't come out. 10. Remove the extra part of the dough from the mold. 11. Repeat this process for the rest of the dough. 12. Heat oil on the medium flame. Once the oil is hot, gently drop the mold into the oil. 13. After 30secs, the mold starts to separate from the dough. Take out the mold from the oil. 14. Flip over and cook the other side. Remove from the oil once it turns crispy and golden colored. 15. On a serving plate, place the chat basket. Add the potato stuffing, onions, tomato, curd, mint chutney, and tamarind chutney. 16. Sprinkle some sev, chili powder, and chat masala powder. 17.
