I've decided to do an AIP cheese of the month from now on :) Here's my May offering: a block of bok choy cheese!! That has a ring to it, doesn't it? Tip: This cheese is delicious as soon as you make it, but if you slice it and let it "age" in the fridge uncovered on a plate for 5-7 days it loses some moisture and gets cheesier and cheesier by the day!! As far as the Knox gelatin, no it did not bother my stomach, but I started having headaches and anxiety from it. Glutamate?
