Welcome to Wild Horse Homestead, where we show you how to make your family delicious, healthy, affordable, vegan and vegetarian foods from basic pantry staples wherever possible. The problem we found after we decided to pursue a mainly plant based diet is: 1. Store based plant foods can be super expensive and sometimes difficult to source, particularly in regional QLD where we live on the farm. And; 2. Some of the benefits of following a plant based diet are lost when the foods we buy from the supermarket are made with low quality or GMO ingredients. We find that they are often preserved with chemical preservatives and are also often made with highly processed foods and additives to enhance the flavour and stabilise the shelf life. Our preference is to eat whole foods and to eat foods that are as fresh and unprocessed as possible. This vegan cashew milk can be made with or without the yogurt and inulin for a basic vegan cashew milk that can be used as a dairy milk replacement. Also, if you have the time, the best way to make this recipe is to soak the raw cashews in filtered or distilled water overnight to soften rather than boiling them to soften as this activates the cashews giving you even more health benefits. There are a few different vegan probiotic drinks similar to Yakult on the market in Australia however, the issue I have with them is the amount of added sugar, like this one for example from Woolworths and the cost. There is one other reason I love to make this milk this way however, and that is because it is one of the key ingredients that make my super creamy, mild, grate-able vegan cheddar cheese. Being a total cheese lover, I really struggled to give up cheese even when I knew it was really causing me some significant health issues. For a while I just accepted my ‘no cheese’ existence because my health issues far outweighed the enjoyment I got from dairy cheese. Now however; nearly every meal I add in some of this delicious cheese and I love it!! For this recipe, I use my normal cashew milk recipe to amp up result into a beautifully smooth, creamy probiotic drink that also contains prebiotics (the non-soluble fibre that feeds your beneficial gut bacteria) to add the slight sweetness that rounds out the tang from the probiotic fermentation process. This is such a simple recipe it takes only 15 minutes to make and costs a fraction of the cost of the store bought brand and tastes amazing!
