They are so easy to make and will leave a great impression on your family and friends! This is how to make Ube Ensaymada Cupcakes: Ube Ensaymada Cupcakes Yield: 24 Cupcakes Ingredients: 4 Eggs, room temperature 400 g Sugar/ 1 1/3 Cups 250 ml Milk/ 1 Cup 250 ml Vegetable Oil/ 1 Cup 2 tsp Vanilla Extract 380 g All-Purpose Flour/ 2 ½ Cups 1 Tbsp Baking Powder 1 tsp Salt 1 Tbsp Ube Flavoring Buttercream: 115 g Butter, softened/ ½ Cup 115 g Sugar/ 1/3 Cup Grated Cheese for topping [I used about 300 g] Directions: 1. Preheat oven to 180°C/356°F. Line cupcake tin with cupcake liners and set aside. 2. In a large mixing bowl, add eggs and sugar. Mix until everything is well combined by using a wire whisk. 3. Add milk, oil and vanilla extract. Continue mixing until everything comes together. 4. Sift in flour, baking powder and salt. Mix until everything is well incorporated. 5. Add Ube flavoring and stir until well combined. 6. Scoop the cupcake mixture into the prepared cupcake liners. 7. Bake cupcakes for 18 – 20 minutes or until a toothpick inserted into the center comes out clean. 8. Let cupcakes cool completely after baking. 9. Make buttercream: In a medium mixing bowl, add butter and sugar. Beat this on medium-high speed until everything is well combined. 10. Spread buttercream on cooled cupcakes.
