http://www.brew-dudes.com/classic-ame... Sometimes screwing around with a classic recipe or technique when it has delivered proved success just doesn't pay off. However, sometimes you can control the ingredients you have and things still come out different than planned. This week, we taste my re-brew of a classic American Cream Ale. I've been playing with different hops and even switched out the adjuncts a couple times. This brew has more traditional ingredients such as Pilsner malt, flaked corn, and table sugar. I had three additions of Liberty hops in this one as I've done in the past. The malt bill and fermentation character are spot on... Unfortunately, this lot of Liberty hops seem to be expressing themselves differently that one would expect. They seem a little more lime-y and citrus like, vs. the normal noble, earthy spice like quality I am used to tasting. But that's how homebrewing is sometimes and that is why we say... BREW ON!
