India's beloved street food - Dal Pakwan. Try it out and let us know your thoughts in the comments! DAL PAKWAN INGREDIENT FOR BOILED DAL: • 1 cup Chana dal (soaked) • 1 cup Toor dal (soaked) • 3 cups water • 2 green chilies (slit) • 1/4 tsp hing (asafoetida) • Salt to taste • 1/4 tsp turmeric powder • 10 to 12 black peppercorns • 1 tbsp oil FOR PAKWAN: • 2 cups maida (all-purpose flour) • 1 tsp cumin seeds • Salt to taste • 3 tbsp ghee • Cold water (as required) • Oil (for frying) FOR DAL PREPARATION: • 2 tbsp oil • 1 tbsp ghee • 1 tbsp ginger (chopped) • 1 tbsp green chili (chopped) • 1 tbsp garlic (chopped) • 2 whole red chilies • 1 tsp red chili powder • 1/2 tsp coriander powder • 1/2 tsp cumin powder • 1/4 tsp garam masala • Pinch of turmeric powder • 1/2 cup water • Boiled dal (from above) • 1/2 tsp dry mango powder (amchur) FOR GARNISHING: • Tamarind pulp • Fried green chilies METHOD FOR BOILED DAL: • In a pressure cooker, combine the soaked chana dal, toor dal, water, green chilies, hing, salt, turmeric powder, black pepper, and oil. • Close the lid and cook until you hear 2 whistles. Set aside. FOR PAKWAN: • In a bowl, mix the maida, cumin seeds, salt, and ghee. • Gradually add cold water to form a medium-hard dough. • Divide the dough into small portions and roll them into balls. • Flatten each ball into a round shape like rotis. • Heat oil in a pan until hot. Fry the dough rounds over medium flame until golden brown on both sides. • Remove from the pan and place on a plate lined with paper towels to drain excess oil. FOR DAL PREPARATION: • Heat oil and ghee in a pan. Add garlic, ginger, and green chili, and sauté. • Add the onions and tomatoes, and sauté until soft. • Add salt, red chili powder, coriander powder, cumin powder, and garam masala. Mix well. • Pour in the boiled dal and mix. • Add amchur powder, mix, cover, and cook for a few minutes. • Transfer to a serving bowl. FOR GARNISHING: • Drizzle tamarind pulp over the dal. • Top with fried green chilies. • Serve the dal with pakwan on a plate. • Enjoy your meal!
