🌱 From Garlic Fail to Tamarillo Abundance | Hugelkultur Garden Update I tried growing garlic in my hugelkultur beds, but the crop failed. Still, what looked like a loss turned out to be the foundation for something better — a rich planting environment that now supports seven thriving tamarillo (tree tomato) trees. These trees are producing an abundant harvest, and the fruit is perfect for making a rich, tangy chutney. In this video, I walk you through the transformation of the bed, share a look at the fruit, and talk about what I’ve learned along the way. 🍅 Tamarillo Chutney from the First Harvest The first batch turned out rich, spicy, and deeply flavorful. Here’s the recipe if you'd like to try it yourself: 🫙 Tamarillo Chutney Recipe • 750g tamarillos (about 12) • 1 tbsp olive oil • 1 onion, finely chopped • 2 garlic cloves, crushed • 1 red chilli, finely chopped • 1 green chilli, finely chopped • 1½ cups caster sugar • 1 cup white wine vinegar • ¾ cup raisins • 1 tsp allspice • ½ tsp cinnamon Gently fry onion, garlic, and chilli in olive oil. Add the rest and simmer until thick. Bottle and enjoy!
