We weren’t even trying to film a recipe… We were just playing in the kitchen with our chickpea cookie dough and wondered what would happen if we rolled it out, added cinnamon and date paste, and treated it like a cinnamon roll. What came out of the oven? Very rustic. Very chunky. Not pretty at all. But WOW do they taste incredible. No flour. No sugar. No fancy baking skills. Just chickpeas, dates, cinnamon, and a little kitchen curiosity. This is what real Whole Food Plant Based baking looks like in our house — simple, fun, and absolutely delicious. Ingredients: 1/2 cup rolled oats 1x 15 oz can of drained and rinsed chickpeas 1⁄4 cup unsalted natural almond butter or any nut and seed butter 3 Tbsp peanut butter powder 4 medjool dates for dough 1/4 cup maple syrup 2 tsp vanilla 1⁄2 tsp baking powder 1⁄2 tsp baking soda 1⁄4 tsp salt 3-4 Tbsp cinnamon 1 cup dates (for date paste) 3/4 cup hot water (for date paste) Instructions: Date Paste: 1 cup tightly packed dates 3/4 cups hot water Combine and soak for 10 minutes Pour into blender and blend on high until smooth Set aside until cookie dough is done Cookie Dough: Pre heat oven to 350F Add oats first in food processor to make oat flour. Now add all other ingredients and mix until smooth like cookie dough. Spread cookie dough on a lightly floured sheet of parchment paper Top with another sheet of floured parchment and roll into a flat sheet of dough Remove top parchment and set in freezer for 10 minutes Remove from freezer after 10 minutes, spread date paste on dough mixture and sprinkle with cinnamon Do your best to roll into a nice log!!!! Freeze again for another 10-15 minutes Slice into pinwheels Set pinwheels on a parchment lined baking sheet and bake at 350F and bake for 20-25 minutes until browned top and bottom 🌱 Welcome to our channel where you will find lots of amazing whole food plant based and vegan recipes as well as healthy lifestyle and weight loss tips to live a long and healthy life.
