INGREDIENTS : Chicken Sausages (1pkt ) For the Masala : 2 sliced onions 7-8 dry red chilies 1 tbsp. fresh coconut 2 cloves garlic 1½ tsp coriander pinch of methi(fenugreek) seeds 8-10 pepper corns 1 tsp fennel seeds 1 tsp cumin seeds 1 piece ginger 2 cloves 1 small cinnamon stick ¼ tsp turmeric powder 1 small ball of tamarind For the Curry: 1 small sliced onion ¼ tsp chili powder + pinch of turmeric 1 tbsp. dry crushed curry leaves 1 tbsp. kasuri methi salt to taste METHOD: In a pan, heat 1 tbsp. oil and stir fry all 'For the Masala' except turmeric, tamarind for few minutes until toasty and aromatic. Let it cool completely. Once cooled grind the mixture adding turmeric, tamarind, add water and grind into a smooth paste. Cut the chicken sausages into desired shape and keep aside. Next in a cooking pot, heat 2-3 tbsp. oil and add 1 small thinly sliced onion, sauté fry until it browns on medium heat. Now add sausage cuts and stir fry for 1-2 minutes. Then add 1 tsp chili powder, garam masala powder, pinch of turmeric and sauté for 1 more minute . Add dry crushed curry leaves and mix well. Pour the ground masala along with water for desired consistency. Add some salt and mix well, bring this to a boil and simmer the curry till sausage is cooked (7-8 minutes on medium heat). Add 1 tbsp. kasuri methi mix well and done . Serve hot with rice, Chapati, etc.
