Share your feedback with us at http://kadenceresearch.com/SCCCCreate... 食谱 Recipe 准备包粽子的材料(可制作20个) : Preparation of ingredients (for 20 pieces): 蒜头 (切丁) | 100克 Garlic (Diced) | 100g 小干贝 (切丁) | 100克 Small dried scallops (Diced) | 100g 香菇 (泡水、切丁再炒五至十分钟)| 100克 Chinese Mushrooms (Soaked, diced and briefly pan-fried) | 100g 栗子 (略煮五分钟,剥皮切丁 ) | 100克 Chestnut (Briefly boiled for 5 mins, peeled and diced) | 100g 三层肉 (切块,以白胡椒、五香粉和黑酱油调味再炒至 ¾熟。可按个人口味调整调味料) | 200克 Pork belly (Chopped, marinate with white pepper, five-spice powder and dark soya sauce. Pan-fried until ¾ cooked. Seasoning amount up to individual.) | 200g 糯米 (冲洗后以黑酱油搅拌均匀。可按个人口味调整调味料)| 800克 Raw glutinous rice (Rinsed and mixed with soya sauce evenly. Seasoning amount up to individual.) | 800g 粽叶 (热水浸泡二至三小时,之后洗刷粽叶后滴干备用| 四十片 Bamboo leaves (Submerge dry leaves into hot water for 2-3hours, rinse with water and drip dry) | 40 leaves 草绳 (以水浸泡一个小时软化) | 二十条 Straw strings (Soften straw string in water for 1 hour) | 20 strings 制作方法 Method 用两片粽叶对折成圆锥形。以糯米垫底再陆续加入其他材料,最后再填满糯米。 Take two bamboo leaves and fold it into a cone shape. Fill leaf cone with glutinous rice at the bottom, add in the ingredients and top it off with glutinous rice again. 将上半部的粽叶往下折。之后用草绳将粽子打结绑紧,可多打几个结固定。 Fold down the remaining leaves to cover the cone and secure the rice dumplings with several knots. 先生火再把煤炭放进炉里 Start the fire and add in the charcoal. Boil water in a pot. 将水煮沸. Put wrapped Bak Zhang into a pot filled with boiling tap water 把包好的粽子放进沸水里, 慢煮两个小时 确保沸水盖过粽子 Make sure dumplings are fully submerged 小秘诀:在水里加盐以保持粽子的原味 Small tip: adding adequate amount of salt will prevent the flavours of the rice dumplings from being diluted by the water 焖煮两小时。定时检查确保粽子都要在沸水里。 Cook dumplings for 2 hours.
