Rum Baba conikicon008 The world's best RUM BABA video recipe. This is by far the best tasting and best looking Rum Baba you will ever taste. Full ingredient list available for FREE from http://www.ConikiTV.com 1. Soak 200g (8oz/1&1/2 cups) raisens in 300ml (1/2 pint / 1/1/4) Rum. 2. Soften 100g (4oz / 1/2 cup ) unsalted Butter to room temperature. 3. Mix yeast - either 25g (1oz) Fresh compressed yeast or 14g (2 teaspoons) dried yeast with 2 tablespoons warm water. 4. Add 250g (9oz/2&1/4 cups) sifted plain flour, make well in the center, then add 2 tablespoons sugar, a pinch of salt, and 2 whole eggs. Mix by hand with a wooden spatula till combined. Then add the third egg, combine, and then add the 4th egg and continue to work the mixture until combined. 5. Add the softened butter and work the dough until it is elastic. Once the dough is elastic drain the raisens and add to the mixture. Reserve the Rum for soaking later. 6. Melt 50g (2oz/1/4 cup) butter over a low heat, add a pinch of sugar, and use this to brush the inside of the Baba tin and set aside to dry. 7. Add the dough mixture to the tin, cover with plastic wrap and then a towel and place in warm place to rise until it has filled the tin. 8. Bake in a pre heated oven at 200 degrees celsius (400F / Gas mark 6) for 15 - 20 minutes. Remove and turn the Baba out onto a wire rack once cooked. 9. Prepare the basic syrup in a saucepan slightly larger than the Baba using 1 litre (1&3/4 pints / 4&1/3cups) water and 500g (18oz / 2&1/4cups) sugar OR Prepare the Modified syrup using 1 litre (1&3/4 pints / 4&1/3cups) water and 250g (18oz / 2&1/4cups) sugar and 125g (4.5oz / 1&1/8cups) Thick Apricot Natural Jam. Simmer until it thickens. 10. Place the Baba into the syrup and allow the syrup to be absorbed using the rotating technique as pictured in the video. Spoon and brush the syrup, rotate the Baba, until it is fully coated and absorbed. 11. Remove the Baba, spoon on the remaining rum, and brush with any remaining syrup and allow to cool before serving. 12.
