Our beloved antie Sue makes THE BEST waffles. We could not even think about spending any money on waffles at restaurants since we encountered hers. It smells like heaven, and it is buttery, flavorful, and fluffy. My husband, who is obsessed with adding a ton of maple syrup when it comes to pancakes and waffles, confirmed that he is happy to eat her waffles without any of the syrup! Its flavor doesn’t come from sugar or salt, but it comes from the quality of ingredients and little things like using a specific type of baking powder, shifting flour, and cooking with a good waffle maker. It took me countless times to recreate her recipe, but it is finally here. Special thanks to antie Sue! INGREDIENTS for 6-7 waffles (7-inch diameter, 1-inch thick) ½ cup of unsalted butter, melted (*organic grass fed) 1 ¾ cups of cold whole milk (cream on top kind, shake well) 2 large eggs (organic free range) 4 scoops of ⅓ cup of flour (shift ⅓ cup at a time) 4 teaspoons of sugar (powdered cane sugar) 4 teaspoons of baking powder (Clabber Girl -Double Acting Baking Powder) ½ teaspoon of salt 1 teaspoon of vanilla extract *Suggested for best results (Half Recipe) INGREDIENTS for 3 waffles ¼ cup of unsalted butter, melted ⅞ cups of cold whole milk 1 large egg 2 scoops of ⅓ cup of flour 2 teaspoons of sugar 2 teaspoons of baking powder ¼ teaspoon of salt ½ teaspoon of vanilla extract INSTRUCTIONS -Melt butter (we’ll add it at the end) -In a blender, add cold milk, eggs, flour, baking powder, sugar, salt, and vanilla extract. Blend it at a medium speed for 30 seconds and scrape flour from the sides. Blend 1 min at a high speed and whip the batter. -Reduce the speed and pour in the melted butter while blending. Blend for an additional 1 min. -Rest the batter in the fridge for 30 min or more. You can make it the night before making waffles. Good for 2-3 days.
