Technique, revised ,reform ... this what u need. I hate reading a Long recipe 😆 this method of mine is shortcut Probably will help those first timer. Stay longer in the fridge the more sour your sourdough 😉 Ingredients: 525 grams water 80 degree 20 grams salt, 1 tablespoon 200 grams very active starter- make sure it floats 700 grams bread flour Instructions: 1. Make the starter ahead ( this can take a week or more) 2.Make the dough: 3.pour the water into a large bowl 4.Add the starter to the water until completely mix 5. Add the flour and mix with spatula. At the end use wet hand to form shaggy dough ball 6. Add your salt to the bread dough. Use your hands to pinch and stretch the dough until the salt is mixed. 7. autolyse: let it rest about an hour 8. Folding -15 minutes interval 4 times, using wet hands pulled thedough ball up and stretch it gently as you pull it over the dough ball top. make sure your dough will become elastic 9.cover the bowl dough with plastic and keep it in the fridge for overnight. 10.dividend and rest the dough: On a clean unfloured counter pour out the dough. Cut into half, form each half into a dough ball. Flour the top of the dough and rest for 30 minutes. 11.Final shape and rise: Gently stretch the side and pull the dough over from the bottom. And pull the dough from the side to the middle. And take the dough from the top of the bowl. Place your dough in your Rice floured bowl. Cover with plastic bag and rise in the fridges for 2- 4 hours . 12. Baking: Preheat the oven to 450 degrees and heat up your Dutch oven at least 40 minutes. Remove one banneton from the fridge turn banneton upside down fall gently onto the parchment paper. Floured TOP evenly and scored sharpe knife. And carefully put Into your very hot Dutch oven. Bake it for 35 minutes. And remove lid additional 30 minutes until the surface get dark. Place the finished loaf on a cooling rack. #enjoy #happybaking😍
