This delicious and moreish "Green tea" or "Matcha" TIRAMISU homemade recipe really is one of the most simple dessert recipes as no baking is required. Ingredients for 2 servings: medium eggs x 2 (please be cautious when using raw eggs and check local eggs for suitability. Alternatively use pasteurised ones) granulated sugar x 30g mascarpone cheese x 250g cognac or rum x 1tsp Matcha green tea powder x 2 Tbsp (Approx) hot water (around 70-80 degrees celsius) x 200ml (adjust to taste, should be strong in taste, similar strength to espresso coffee) Italian sponge fingers x 8 White chocolate Milk chocolate (both optional) Matcha green tea powder x 1/2 tsp for dusting This tiramisu inspired dish is by no means traditional and is Chef Dai's spin on an Italian classic. Instead of soaking the sponge fingers in espresso or coffee, matcha green tea powder is used instead. Please do not use green tea bags as they will not result in the same desired flavour. Important points to note are: 1) DO NOT overbeat your egg whites. Once over beat, you will NOT be able to return to firm peaks. If you struggle to get firm peaks, try adding a couple of drops of lemon juice. 2) Separate the egg whites when cold, whisk when at room temperature 3) MAKE sure to use completely dry whisks and bowls. 4) Refrigerate for at least a couple of hours before eating. This will allow the sponge finger to become soft. 5) Mascarpone cheese should be at room temperature when mixed into the egg yolks I think the key to a great tiramisu is getting as light and fluffy mascarpone and egg mix as possible. Also the balance between the sweetness and bitterness of the dessert is key to a getting a great flavour. Thanks for watching everyone!!!!!
