Be sure to hit those buttons, like share and subscribe. #lowcountry #southerncooking #country #easyreciple #simplerecipe #whitelily #whitelilyflour #pumpkin #pumpinroll #dessertrecipe #desserts #easydessert Pumpkin Roll Cake ¾ cup of all purpose flour 1 tsp baking powder ½ tsp baking soda ½ tsp salt 1 tsp cinnamon 1 tsp pumpkin pie spice 1 tsp vanilla extract 3 eggs 1 cup of sugar 2/3 cup of pumpkin puree Icing 2 ½ cups of powdered 10x sugar 1 block of cream cheese 1 stick of butter 1 tsp vanilla extract Preheat oven to 350. Beat eggs then add sugar and vanilla, mix well. whisk all dry ingredients and add to wet ingredients, mix well scraping down sides. Grease parchment paper and line a 10x15 baking pan, spread batter evenly in pan, it will be thin, give the pan a shake to ensure it is leveled. Bake about 15 minutes until cake springs back when you tough it. Meanwhile, lay a thin kitchen towel flat on the counter. Sprinkle with 3/4 cup confectioners’ sugar. Once the cake comes out of the oven, immediately invert it onto the towel. Peel off the parchment paper, then, starting with the narrow end, begin rolling the cake up with the towel. Do this slowly and gently. The cake will be warm, as it just came out of the oven . Allow the cake to cool completely while rolled up in the towel. I stick mine in the refrigerator for about 30 min to speed it up. Gently and slowly unroll the cake. Flatten it out and spread frosting evenly on top, leaving about a 1/2-inch border around the cake. Gently and slowly roll the cake back up, without the towel this time. Make sure you’re rolling it tightly. Loosely cover with plastic wrap and refrigerate for 20 minutes before slicing and serving dust with more confectioners’ sugar, if desired.
