This simple chicken biryani is elegant and full of flavors from the fragrant basmati rice, the spices and the meticulous cooking style it follows. For The Rice 1 bay leaf 1 cinnamon stick 4 green cardamoms 6 whole cloves 2 star anise 6 black peppercorns 1/2 tbs ghee 1/2 tsp vegetable oil (optional) 6 cups water or enough Salt to taste For the Chicken Marinade 4lbs chicken thighs, bone in , skinless, cut in half 1/2 c yogurt 1tbs garam masala 1 tbs spice mix ( coriander cumin and fennel ) 1 tsp turmeric 1 tsp chili powder 1 lemon , juiced and zested salt and pepper For the Cooking 1 large red onion , sliced 1/3 C vegetable oil 1 tbs Ghee 1.5 tbs Garlic /ginger paste 1 tsp garam masala 1 tsp spice mix ( coriander ,cumin, fennel) 1 tsp turmeric 1tsp chili powder 2 green chilis 1tbs cilantro, chopped 1tbs mint, chopped 1 bay leaf 1/2C Yogurt 1.5 C Chicken stock or water 1/3 C heavy cream Salt and pepper to taste For the Layering and Finishing Reserved crispy onions Cilantro Mint Turmeric slurry Pinch saffron soaked in cream (optional) or Food color, red Ghee 1tsp Rose water Plating and Garnishing Reserved crispy onions Cilantro Mint Lemon juice and more to serve
