Ingredients: • 1 bowl boiled green peas • 1 bowl grated paneer • 1 bowl boiled and mashed potato • Rice flour – 2 spoons • Jeera (cumin seeds) – 1 tsp • Grated cheese – 2 tbsp • Ginger-garlic-green chili paste – 1 tsp • Orange food color – a few drops • Magic Masala – 1 tsp • Asafoetida (hing) – a pinch • Salt – as required • Oil – for frying Instructions: 1. Heat 1 spoon oil in a pan. 2. Add jeera and a pinch of hing. 3. Add ginger-garlic-green chili paste and sauté until fragrant. 4. Add boiled green peas and mash them well in the pan. 5. Add a pinch of Magic Masala and salt. Mix well and set aside. For the Orange Mixture: 6. Take mashed potato in a bowl. 7. Add a few drops of orange food color, rice flour, and salt. Mix well until smooth. 8. Add grated paneer and cheese, and mix to form a soft dough. Shaping the Cutlets: 9. Take a portion of the orange dough in your palm and make a round disc. 10. Create a small space in the center for the green pea filling. 11. Fill the center with the green pea mixture. 12. Add a little paneer on top of the green filling. 13. Cover the filling with the orange dough gently, forming a smooth round cutlet. Frying: 14. Heat oil in a kadai (pan). 15. Carefully place the cutlet in the hot oil. 16. Fry on medium flame until golden brown and crispy on both sides. Serving: 17. Your colorful Tiranga Cutlet is ready to serve! 18.
