📝 Ingredients For Puran (Stuffing): • ½ kg chana dal • ½ kg jaggery (gud) • 2 glasses water (for pressure cooking) • A pinch of turmeric • Cardamom (elaichi) powder • Nutmeg (jaipal) powder For Dough: • ½ kg maida • A pinch of turmeric • Very little salt • 1–2 tablespoons oil • Water (as required) For Cooking: • Ghee (toop) – as needed • Extra maida for dusting ⸻ 👩🍳 Method (Step-by-Step) Step 1: Prepare the Chana Dal 1. Wash and soak chana dal overnight. 2. Add the soaked dal to a pressure cooker. 3. Add 2 glasses of water and a pinch of turmeric. 4. Close the lid and cook for 3 whistles. 5. Let the pressure release naturally and open the lid. Step 2: Make the Puran 6. Strain the cooked dal using a strainer. 7. Press the dal using a bowl or glass to collect a smooth mixture below. 8. Keep this dal mixture aside. 9. Heat a kadai and add jaggery. 10. Let the jaggery melt completely. 11. Add the chana dal mixture to the melted jaggery. 12. Add cardamom and nutmeg powder. 13. Cook on medium heat, stirring continuously. 14. The mixture should become thick enough that the spoon can stand upright. 15. Make sure it does not stick to the base. 16. Once done, keep the puran aside. Step 3: Prepare the Dough 17. Take maida in a bowl. 18. Add a pinch of turmeric and very little salt. 19. Add a little oil and mix well. 20. Add water little by little and knead into a soft dough. 21. Apply a little oil on top of the dough. 22. Cover and rest the dough for 20 minutes. Step 4: Shape the Puran Poli 23. Tie a clean cloth on the rolling board (polpat). 24. Make small balls from the puran mixture. 25. Apply a little oil on your hands. 26. Take a small portion of dough and form a small circle, keeping space in the center. 27. Place the puran ball inside. 28. Close the dough properly from all sides. 29. Dust lightly with maida. Step 5: Roll and Cook 30. Gently roll the puran poli without applying pressure, as it may tear. 31. Heat a tawa on medium flame. 32. Cook the puran poli on both sides. 33. While cooking, apply a little ghee on top. 34. Cook until both sides are nicely done.
