Welcome back to another meal prep video 🥳🥳🥳 As I mentioned below are the ingredients you'll need for each recipe I do tend to measure by eye so feel free to adjust each measurement accordingly to your personal taste Miso Poached Chicken Drumsticks: 8 - 10 chicken drumsticks 1/4 cup miso paste aromatics of your choice: carrots, onions, garlic, ginger, etc etc 2 tbsp soy sauce 2 tbsp cooking sake or rice wine vinegar 1/4 cup chopped spring onions "Marinara" Meatballs 500g lean ground beef mince (I used 90% meat 10% fat) 2 cloves garlic 1/2 finely chopped onion 2 tbsp tomato paste 1tbsp mixed Italian herbs salt to taste olive oil Beef "Koftas" 500g lean ground beef mince 4 garlic cloves 1/2 finely chopped onion 2 stalks finely chopped coriander (cilantro) 1 tsp cumin 1 tsp paprika salt to taste olive oil Quick Roasted Sweet Potatoes 4 - 5 sweet potatoes, I used 3 different types salt olive oil Mexican Corn 500g frozen corn kernals 1 tbsp butter salt to taste 1 tsp paprika 1 tsp cumin 1 tsp turmeric ground black pepper to taste zest and juice of 2 lemons 2 stalks chopped coriander (cilantro) Roasted Broccoli Salad 500g frozen broccoli florets - defrosted. You can also obviously use fresh olive oil handful of pepitas (pumpkin seeds or other seed mix) handful of sultanas (or other dried fruit of your choice, cranberries would be really good) I chose not to salt this one as a lot of the other recipes had a lot of salt already but it's your personal preference Marinated Cucumber 1 x large sliced cucumber 1 tsp fish sauce 4 tbsp rice wine vinegar 1 tbsp cooking sake 2 tsp sweetener (I use stevia) 1 tbsp roasted sesame seeds salt to taste Hogao ~7-8 tomatoes, chopped 1 x bunch chopped spring onion 1 tsp cumin salt to taste ground black pepper to taste 2 stalks chopped coriander (cilantro) Whipped Chilli Tofu Cream 900g pack firm tofu - drained juice of 1 large lemon + zest if you can 1/4 cup water salt to taste 1 tbsp roasted sesame seeds 1 - 2 tbsp crispy chilli oil Creamy Tahini Sauce 1/4 cup tahini 1/2 cup cottage cheese ~2 tbsp lemon juice 2 stalks chopped coriander (cilantro) salt to taste
