A delicious memory from childhood when my grandma baked pies. Ingredients For the dough (~15-17 pieces): 🥣 Flour – 370g (2 tbsp for the sponge) 🥣 Dry yeast – 7g 🥣 Milk – 250 ml 🥣 Sugar – 20g 🥣 Salt – 1/3 tsps 🥣 Oil – 30 ml 🥣 Egg – 1 pc (for brushing) For the filling: 🥬 Sauerkraut – 200g 🥬 Onion – 1 pc 🥬 Carrot – 1/2 large 🥬 Salt & pepper to taste 🥬 Oil (for frying) – 1 tbsp Let’s start with the sponge (pre-ferment): In a bowl, mix the dry yeast, flour, warm milk, and sugar. Set aside 15–20 minutes to activate. Meanwhile, prepare the filling: Peel and finely dice the onion and grate the carrot. Heat oil in a skillet, add the onion and carrot, and sauté over medium heat for 7–10 minutes, stirring occasionally. Now back to the dough: Combine the sponge and the remaining flour, and knead into a dough. I use a stand mixer—it takes about 10 minutes. After 2 minutes of mixing, add the oil. Cover the dough and let it rest for 1 hour to rise. Back to the veggies: Add sauerkraut to the pan with the onion and carrot. Season with salt and pepper to taste. Simmer on low heat for 1–1.5 hours, stirring occasionally, until the cabbage becomes soft. After the dough has rested, knead it again by hand for 3–5 minutes. Divide it into small balls, about 38–40g each. Preheat your oven to 180°C (356°F). Roll out each dough ball, add the filling, and pinch the edges tightly so the filling stays inside. Brush with egg yolk and sprinkle with sesame seeds if desired. Bake for 20 minutes at 180°C until golden and delicious. Smachnoho!
