It has a lot to do with fermentation (not as much as you think), and a lot of precision in handling. Let me first admit to you that I find this very challenging in a home environment where temperature control is moot. Most of us bake in the kitchen, and depending on the time and weather, it can be hot or cold. So, let's just explore the possibilities that come with this method that I learned, and play around with fermentation timing by doing trial and error in our own home.
