Here's a simple recipe: Ingredients: 2 large onions, thinly sliced 2 medium potatoes, peeled and cubed 3 tablespoons poppy seeds (posto) 2-3 green chilies, slit 1/2 teaspoon turmeric powder 1/2 teaspoon red chili powder (optional) Salt to taste Mustard oil for cooking Fresh coriander leaves for garnish Instructions: Soak the poppy seeds in water for 2-3 hours, then grind them into a fine paste. Heat mustard oil in a pan and add the sliced onions. Fry until they turn golden brown. Add the cubed potatoes and fry for a few minutes until they start to brown. Add the poppy seeds paste, turmeric powder, red chili powder (if using), slit green chilies, and salt to taste. Mix well. Cook covered on low heat until the potatoes are tender, stirring occasionally. If needed, sprinkle some water to prevent sticking. Once the potatoes are cooked through and the mixture is dry, remove from heat. Garnish with fresh coriander leaves. Serve hot with steamed rice
