Recipe Crust 1 cup slivered almonds 1 cup unsweetened shredded coconut 1 tbs fresh lemon juice 1 tbs honey 1 pinch sea salt Process the almonds, coconut, and sea salt in a food processor until a flour like consistency is achieved. Then, add the honey and juice and process until it sticks together. Press this mixture into a 9-inch spring form pan Filling 3 cups raw cashews 1½ cups unsweetened almond milk 1 cup fresh lemon juice 1 cup coconut oil (melted) ½ cup honey 1 tsp vanilla extract (alcohol-free) ¼ tsp sea salt 3 tbs lecithin (opt) 1 tsp lemon zest (opt) Blend all ingredients except the lecithin and coconut oil in a high-speed blender, until a creamy texture is achieved. Make sure no gritty texture. Then, add the lecithin and melted coconut oil, blend on high until well mixed. Pour this filling over the crust and let set in fridge overnight. This will firm the mixture up and produce a delicious "cheesecake."
