One of the popular chicken starter recipe from the oriental cuisine served with nutty peanut sauce. CHICKEN SATAY WITH PEANUT SAUCE Ingredients 250 grams boneless chicken breasts, cut into strips ½ tablespoon chopped garlic 1 teaspoon coriander powder 1 teaspoon cumin powder 1 teaspoon red chilli powder 1-2 tablespoons onion paste 2 teaspoons brown sugar 1 tablespoon peanut butter 1 tablespoon soy sauce Salt to taste 1 inch lemon grass, finely chopped 1-2 tablespoons oil Peanut sauce ½ cup roasted peanuts 1 tablespoon chopped garlic 1 teaspoon chopped fresh red chillies 1 teaspoon coriander powder 1 tablespoon oil 1 teaspoon soy sauce 1-1½ teaspoons sugar Salt to taste Method 1. To prepare marinade, combine garlic, coriander powder, cumin powder and chilli powder in a bowl and mix. Add onion paste, brown sugar, peanut butter, soy sauce, salt, lemongrass and mix well. Add chicken, mix and set aside to marinate for 30-40 minutes. 2. To prepare peanut sauce, grind peanuts to a coarse powder. Transfer in a bowl. 3. Grind together chopped ginger, chopped garlic, fresh red chillies and coriander powder to a fine paste. 4. Heat oil in a non-stick pan. Add ginger-garlic-chilli paste and sauté for 30 seconds. Add peanut powder, mix and cook for a minute. 5. Reduce heat, add soy sauce, sugar and salt, mix and cook for 3-4 minutes. Add some water, mix and cook on low heat for 1-2 minutes or till thick. Remove from heat and set aside. 6. Skewer the marinated chicken strips into satay sticks. 7. Heat oil in a non-stick pan. Place prepared skewers and cook from all sides equally for 5-6 minutes or till the chicken is fully done. Drain on an absorbent paper. 8. Serve hot with peanut sauce.
