Soft shortbread on the bottom, a fruity jam layer in the middle, and a golden crumble topping on top. No mixer needed, no special skills - just mix, chill, grate, and bake. These bars always come out delicious and are perfect for tea time, lunchboxes, or sharing with friends. This recipe uses a 12×16 inch (30-40 cm) baking sheet and works with any jam - tart flavors like raspberry, sour cherry, or blackcurrant give the best balance. 4 cups (500g) all-purpose flour 500g 2 tsp (10g) baking powder 1 cup (200g) sugar 7/8 cup (200g) butter (almost 1 cup, softened) 3 large eggs 1 to 1¼ cups jam (a tart jam works best) ⭐ Instructions Make the dough: In a large bowl, combine flour, baking powder, sugar, butter, and eggs. Mix until the dough comes together and turns smooth. Chill the dough: Divide the dough into two equal parts. Place one half in the fridge. Place the other half in the freezer for about 30 minutes. Prepare the base: Take the chilled (non-frozen) dough and press or roll it directly onto an ungreased baking sheet. Add the jam layer: Spread the jam evenly over the dough. A slightly tart jam gives the best balance. Add the grated top: Grate the frozen half of the dough over the jam to create the classic “grated pie” texture. Bake: Bake at 350°F (180°C) for 30-35 minutes, until the top is lightly golden. Cool & slice: Let the pie cool slightly, then cut into squares.
