Christmas Mince Pies A holiday favorite! These homemade mince pies are filled with spiced, fruity mincemeat and wrapped in buttery pastry—perfect for a festive treat! For the Pastry: 2 cups (250g) all-purpose flour 1/2 teaspoon salt 1 tablespoon icing sugar (optional, for sweetness) 3oz (85g/6tbs) cold butter, diced into cubes 1.5oz (40g/3tbs) Lard / Shortening 4–5 tablespoons ice-cold water For the Mincemeat • Homemade Christmas Mincemeat 🎅🏻 So worth it! Wash your hands and put on your apron! Make sure your kitchen space is clear, and set up any stools or mats if you need help reaching or steadying things. 2. Preheat the oven to 180℃ (350°F) with the rack in the middle. Step 1: Make the Mincemeat • Homemade Christmas Mincemeat 🎅🏻 So worth it! (Tip: If you can make the mincemeat a few days ahead, the flavors will be even better!) Step 2: Make the Pastry 1. In a medium bowl, add the flour, salt, and powdered sugar (if using). Stir to combine. 2. Add the cold butter and lard cubes to the flour mixture. Use your fingertips to gently smoosh the butter and lard into the flour until it looks like rough breadcrumbs. then rub through your fingers for that sandy texture. 3. Add 1 tablespoon of ice-cold water at a time, mixing with a spoon or your hands until the dough just comes together and gets sticky enough to form a dough (you may not need all the water). 4. Form the dough into a ball, wrap it in plastic wrap, and let it chill in the fridge for about 30 minutes. Step 3: Assemble the Mince Pies 1. Lightly flour your work surface and rolling pin. Roll out the pastry dough to about 1/8 inch (3mm) thick. 2. Use a round cookie cutter or glass (slightly larger than the muffin tin openings) to cut circles of dough. 3. Gently press each pastry circle into the muffin tin to form a small cup, then add a spoonful of mincemeat filling to each cup. 4. Roll out any remaining pastry and cut smaller circles or stars to place on top of each mince pie. YOu can also do a shape uch as a star or Christmas tree Step 4: Bake the Mince Pies 1. Brush the tops of the pies with a little beaten egg to give them a golden finish. You might want to spinkle with sugar. 2. Place the pie/muffin tin in the oven and bake for 10–15 minutes or until the pastry is golden brown. Step 5: Cool and Serve 1. Carefully remove the pies from the oven (use oven mitts).
