Corn Palak (Spinach and Corn) that's perfect for winter: #ingredients 250 gmfresh spinach leaves (palak), washed and blanched 1 cup corn kernels (fresh or frozen) 1 medium onion, finely chopped 2-3 green chilies, finely chopped (adjust to taste) 1-inch piece of ginger, grated or chopped 2-3 cloves of garlic, minced/chopped 1 teaspoon cumin seeds 1 teaspoon garam masala 1/2 tbsn cumin powder ½ teaspoon turmeric powder 1 tbsn coriander powder Salt to taste 2 tablespoons oil or ghee ¼ cup cream (optional, for richness)vegan can skip this add plant based cream pomegranate seeds for garnish Instructions: 1. **Prepare the Spinach**: Boil water in a pot, add the chopped spinach, and blanch for 2-3 minutes until wilted. Drain and immediately transfer to cold water to retain the green color. After a few minutes, drain again and blend into a smooth paste. 2. **Cook the Base**: In a pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. Add the chopped garlic and saute until they turn golden brown. 3. **Add onion Cook till transparent, grated ginger, and green chilies. Cook for another minute until fragrant. And all powders spices 4. **Combine Ingredients**: Add the spinach puree Cook until boil and then add blanced corn 5 *finishing up* Finish with garam masal , fresh double cream. 6 ** Serve and garnish ** Serve hot with rice ,chapati and garnish with fresh cream.
