(MonkFish Romesco) Rape Con Romesco Serves - 4 INGREDIENTS ROMESCO SAUCE Red bell peppers - 2 nos Tomatoes - 2 nos Garlic cloves - 5-6 nos Paprika powder - 1/2 tbsp Salt - 1/3 tbsp Crushed black pepper - 1/3 tbsp Olive oil - 20 ml FOR FISH MARINATION Fillets (monkfish ) - 2 nos Lemon juice - 1/2 Salt - as required Pepper- as required FOR SEASONED FLOUR All-purpose flour - 200 grams Salt - 1/2 tbsp Crushed black pepper- 1/2 tbsp Garlic powder- 1/2 tbsp Onion powder-1/2 tbsp METHOD OF PREPARATION 1. Take fish fillets and cut into strips and marinate them in lemon, salt, black pepper. 2. Now prepare ROMESCO sauce - take a baking tray to add deseeded red bell peppers, deseeded tomatoes, garlic cloves and apply some olive oil on them 3. Bake them in a preheated oven at 180-degree Celcius for 20 minutes. 4. Now remove the skin of both bell peppers and tomatoes and add the roasted ingredients in a mixer grinder and add paprika, salt, pepper and blend them into a smooth paste. 5. Now prepare seasoned flour by in a plate takes refined flour, salt, pepper, garlic, and onion powder and mix them. 6. Now take strips of the fillet and coat them in seasoned flour ( dust the excess flour) and shallow fry them in a pan. 7. Cook the fish for 3 minutes ( each side ) 8. Serve the fish with ROMESCO sauce and garnish with parsley.
