PUFF CRUST PIZZA INGREDIENTS FOR PIZZA SAUCE Butter - 40 grams Tomatoes - 4 nos Garlic - 8-10 cloves Chilli flakes - 1 tbsp Mixed herbs - 2 tbsp Garlic powder - 1/2 tbsp Onion powder- 1/2 tbsp Salt - 1/2 tbsp Brown Sugar - 3 tbsp Vinegar - 2 tbsp FOR PUFF CRUST Refined flour- 1 1/2 cup Salt - 2 grams Mixed herbs - 1 tbsp Butter - 80 grams + 20 grams Water 80 ml + 30 ml Lemon juice - 1/2 no Cheddar and mozzarella cheese blend - 150 grams METHOD OF PREPARATION 1. Take a pan add water and let it boil , remove the eyes of tomatoes and slit cross on bottom of tomatoes. 2. Now blanch the tomatoes and refresh them in fresh cold water and remove the skin of tomatoes. 3. Now in a mixer grinder add tomatoes and peeled garlic cloves and add 30 ml water and make a paste. 4. Now in a pan add 40 grams butter , paste , chilli flakes, mixed herbs, garlic powder, onion powder,salt , brown sugar and vinegar and give it a mix 5. Cook the sauce till it gets thickens. 6. Now in a bowl add refined flour , salt , mixed herbs and add butter and rub it all together . 7. Take 80 ml water add 1/2 lemon juice. 8. Now add lemon water in seasoned flour and make a hard dough and keep it in a refrigerator for 10 minutes 9. Now take 80 grams butter and mix 4 tbsp refined flour in it , place the butter on butter paper and spread on it and again cover with another butter paper and keep it in a refrigerator till it gets hard. 10. Now take out the refrigerated dough and spread with rolling pin and place hard butter in middle and cover with all 4 edges and cling wrap it and keep it in a refrigerator for 30 minutes 11. On a lightly floured surface, roll out the dough into a large rectangle about 1/2 inch thick and again give it a book fold and place in a refrigerator with cling film for 20 minutes [ this will prevent from butter to gets melt ] 12. Repeat this step for 5-6 times [ this will multiplys the layers of crust] 13. Now give it a final rolling thickness will be about 10 mm and cut the edges with a sharp knife. 14. Now in a preheated oven place the dough in oven for about 10 minutes at 220 degree celcius. 15. Take the crust out of it and spread the pizza sauce on it and add cheese blend on top of it and top it with some crushed basil . 16. Again bake it at 170 degree celcius for about 10-12 minutes . 17. Serve it hot with some oregano and garnish with fresh basil .
