In this week's episode of my UK based slow living vlog, join me in the kitchen of my old English terraced house as I prepare some sourdough discard crackers and make a strawberry cheesecake. It's been a fresh and breezy week after the recent heatwave broke, and I've been spending lots of time in the garden. Join me at home and in my back garden, as well as down at my woodland plot at the nearby community gardens where my husband and I are spending some time harvesting our garlic. Rye sourdough discard crackers: 200g sourdough discard, fed 1:1 (e.g. each time you feed it, you feed it 1 part flour and 1 part water). 100g rye flour Alternatively, use 200g flour, 100g water, and 1/2tsp instant yeast Suggested flavours: sage leaves, thyme or marjoram, sea salt, nutritional yeast. I like adding nutritional yeast to recipes because it's a good source of vitamin B12. Strawberry cheesecake recipe: 200g dates 100g almonds 400g strawberries 1 block firm tofu (about 200g) 2tbsps grape molasses 1tsp lemon juice a trickle of soya milk (or coconut / oat milk) to help get your blender going. Don't add too much, you don't want the mixture to be too thin. I call my vlog a slow living vlog. It's a silly phrase based on the slow movement to describe a way of life that allows time for stopping to smell the flowers, going the long way around, and taking notice of the seasonal ebb and flow of everyday life. It goes hand in hand with the cottagecore trend, but everyone can romanticise their life and find beauty in the little things, even those of us who live in cities and live otherwise normal and unremarkable ordinary lives.
