Spaghetti with Pork Sausage Ingredients (Serves 4) 1 lb pork sausage (Italian-style; mild or hot) Use ground pork for a milder taste. 12 oz spaghetti 1 tbsp olive oil 1 small onion, diced 3–4 cloves garlic, minced 1 (24 oz) jar marinara sauce (or 28 oz crushed tomatoes) 1 tsp Italian seasoning ½ tsp red pepper flakes (optional) Salt & black pepper, to taste ½ cup reserved pasta water Fresh basil or parsley (optional) Grated Parmesan, for serving --- Instructions 1. Boil the pasta Bring a large pot of salted water to a boil. Cook spaghetti until al dente. Reserve ½ cup pasta water, then drain. 2. Brown the sausage Heat olive oil in a large skillet over medium-high heat. Remove sausage from casing (or slice if links). Cook, breaking it up, until deeply browned (8–10 minutes). Don’t rush this—color = flavor. 3. Build the sauce Add onion to the sausage; cook 3–4 minutes until soft. Add garlic; cook 30 seconds until fragrant. Stir in marinara, Italian seasoning, red pepper flakes, salt, and pepper. Simmer 10–15 minutes. 4. Bring it together Add spaghetti directly to the sauce. Toss, adding reserved pasta water a little at a time until silky and coated. 5. Finish & serve Taste and adjust seasoning. Top with Parmesan and fresh herbs. --- Optional Upgrades (Highly Recommended 😏) Creamy version: Stir in ¼ cup heavy cream at the end Veg boost: Add sautéed mushrooms, bell peppers, or spinach Extra richness: Finish with a knob of butter Cheesy bake: Transfer to a dish, top with mozzarella, broil 2–3 min
