As the cold weather sets in, nourish your body with this deeply comforting bone broth! Made with beef bones, chicken feet, chocho (chayote), and a blend of fresh vegetables like ginger, cilantro, culantro, carrots, onions, and garlic, this broth is perfect for keeping warm during chilly months. With added thyme, rosemary, peppercorn, and Maggie beef seasoning, it’s slowly simmered and then skimmed and strained to create a light, nourishing broth. When cooled, the broth becomes silky and gelatinous, and you can jar it and refrigerate it for daily use, much like a protein shake. Its gelatinous consistency is part of what makes it so nourishing for the body. Ingredients: • 2-3 pounds of beef bones • 1-2 pounds of chicken feet • 1 chocho (chayote), peeled and chopped • 2-3 carrots, chopped • 2-3 onions, quartered • 4-5 cloves of garlic, smashed • A handful of cilantro and culantro • 2-3 sprigs of thyme • 2-3 sprigs of rosemary • 1 tablespoon of whole peppercorns • 1-2 tablespoons of Maggie beef seasoning powder (optional) • Salt to taste • Water to cover Instructions: 1. Scald the Bones: • Place the beef bones and chicken feet in a large pot of boiling water and scald them for a few minutes to sanitize and clean them. Then remove and discard the water. 2. Combine Ingredients: • In a clean large stockpot, add the scalded bones, chicken feet, chocho, carrots, onions, garlic, cilantro, culantro, thyme, rosemary, peppercorns, and Maggie seasoning (if using). 3. Add Water: • Fill the pot with enough water to cover all the ingredients. 4. Simmer: • Bring the water to a gentle boil, then reduce the heat to low and let it simmer for about 2.5 to 3 hours. Skim off any foam or impurities that rise to the surface. 5. Strain and Store: • Once done, remove from heat, skim off any remaining fat, and strain the broth through a fine mesh sieve. 6. Refrigerate: • Let the broth cool. Once cooled, you can jar it and store it in the refrigerator.
