Chef Brenda of Brenda's French Soul Food restaurant in San Francisco walks you through how to cook her restaurant version of Mac & Cheese created to please the masses! Makes about enough to fill a 2 quart casserole dish Ep. 6 Baked Mac & Cheese 1# Dried Pasta (or 8 Cups Cooked Pasta), be sure to use a small pasta like elbow 1 Stick Butter ¾ AP Flour 4 C Whole Milk 12 oz Shredded White Cheddar (we use sharp Tillamook brand) 1/4 TSP Nutmeg 1 TB Onion Powder 1 TB Dijon 1 TSP Salt ½ TSP Black Pepper 2 C Shredded Yellow Cheddar (we use sharp cheddar) ½ C Breadcrumbs Method: Cook pasta to al dente. Drain, cool and set aside in a large mixing bowl. To make bechamel melt the butter in a saucepan and add flour. Stir until fully incorporated then slowly pour in milk while whisking to help avoid lumps. Add white cheddar, nutmeg, onion powder and mustard. Season with salt and pepper. Pour bechamel over pasta and mix thoroughly. Pour pasta into a buttered casserole dish and liberally coat top with yellow shredded cheddar and breadcrumbs. Bake in a 375* oven until cheese is golden brown and mac & cheese is bubbling about 10-15 minutes.
