So if you’d like to try one of the products we used in the video, you can find a link to them in the video description below, and we may earn a commission. *Gluten-Free Short Crust Pastry* This is a simple short crust pastry that can be used for either sweet or savory pies, hand pies, and so on. *Ingredients* 80g Brown Rice Flour 90g Buckwheat Flour for Savory Pies, and Sorghum Flour for sweet pies. Sorghum has a very buttery flavor which I find goes well with sweet pies. 50g Tapioca Starch 70g Almond Flour 50g of sugar for sweet pies (optional) a couple of pinches of salt. 3 tsp Ground Flaxseed Meal 1 tsp Psyllium Husk One stick of Butter (salted) chilled and diced 1 large egg, beaten 1/4 cup of cold water *Directions* Mix the flours, starch, salt, flaxseed and psyllium husk together and mix them well. Rub the butter in with your fingertips. If you use your whole hand, the butter will warm up too fast and you want it to stay cold. Keep braking up the butter and tossing it into the flour until it resembles breadcrumbs. If you get to a sand like texture you have gone too far. Stir in the beaten egg with a fork. Sprinkle a little bit of the water into the bowl and toss with your fingers. Keep adding water and tossing until it begins to clump together naturally. Keep tossing the dough with your fingers to encourage the flours to start absorbing the water. The finished texture should be soft and squishy, not a firm dough. Knead it a little to bring it into a squished ball and wrap it in plastic wrap. Put it into the refrigerator to chill and hydrate for at least 2 hours, overnight is best. When you are ready, roll out the dough into the desired size and place it in your pie pan or whatever you are using. Par cook the crust for 10 - 15 minutes with some beans or ceramic balls in the bottom to discourage bubbles. Put in your filling of choice and bake until the filling is cooked and the crust is golden brown. *Blackberry Pie Filling* *Ingredients* 24-32 oz of Blackberries. I used 16 oz in the video and it was not enough. Next time I'm going for double. 3 Tbs of Corn Starch 1/4 - 1/2 a cup of Sugar 1/4 - cup of water with a tsp of lemon juice *Directions* Put everything into a pot. Cook on medium and bring to a boil. Simmer for about 15 minutes until it starts to thicken. Take off the heat and let cool for 15 minutes more.
