GLUTEN-FREE SANDWICH BREAD INGREDIENTS 400ml Milk or water 250g Brown Rice Flour 150g Oat Flour for White, Buckwheat for Brown/Rye Style 400g Tapioca Starch 1 Tbsp Psyllium Husk Powder 2 tsp Ground Flax Seed 2 tsp salt 2 tsp Apple Cider Vinegar 1 egg (optional) 1 tsp Honey for White bread, Molasses for Brown/Rye Style. 1 1/2 tsp Dry Active Yeast 6 Tbsp Neutral Vegetable Oil or Butter (optional) DIRECTIONS First, warm a little of the Water or Milk (dairy, nut, or soy) to around 100 degrees. Over 110 degrees will kill your yeast, so as long as you keep it below that, you'll be fine. Once the Milk is warm, add a little of the honey and stir until it is dissolved into the milk, mix in the yeast and set it off to the side to proof for about 10 minutes. Next, put the Flours, Starch, Psyllium and Flax seed into a bowl and mix with a whisk until combined. Once the yeast has bloomed, add the milk/yeast mixture to the flour. Add the Cider Vinegar and Oil or butter at this time. Mix well until fully combined. Is should have the consistency of thick cake batter Take a greased Pullman loaf pan and pour in the dough/batter. Let rise for 30 minutes. Bake in a 350°F/175°C oven for an hour or until the loaf sounds hollow when thumped. Take it out and let it cool completely before slicing. BREAD SPICE INGREDIENTS 3 tablespoons caraway seed 3 tablespoons anise seed 3 tablespoons fennel seed 1 tablespoon coriander seed 1 to 2 teaspoons ground fenugreek, allspice, cardamom or dill. (optional) Gather 'em. Grind 'em. Store 'em in an airtight jar/container. Use 1/4 - 2 teaspoons of the mixture per loaf.
