Wishing You Enjoyable Cooking Moments and a Wonderful Day:) Let me know what you think of my vegan recipes and what recipes you'd like to see next in the comments:) Subscribe to our channel for new recipes and healthy vegan meals, and don't forget to turn on notifications:) 🥣 Ingredients: 240g (1.5 cups) cooked chickpeas (1 can) 250-300g spinach, washed 1 onion 1 carrot, grated 1/2 tsp cumin 1/2 tbsp garlic powder 1/2 tbsp paprika Salt (to taste) 🥣 For the Batter: 120g (1 cup) whole rice flour 1 tbsp chia seeds (or flax seeds) + 3 tbsp water 1 tsp baking powder A pinch of salt 240ml (1 cup) plant-based milk 125ml (1/2 cup) vegan yogurt (or plant-based cream) 🧑🍳 Cooking Tips: Adjust the spices to your taste. You can use regular flour instead of rice flour. Psyllium or flax seeds can replace chia seeds. Plant-based cream can be used instead of vegan yogurt. 🥣 Instructions: Wash the spinach thoroughly and chop it finely. Dice the onion and sauté in a pan over medium heat for 3 minutes. Add the grated carrot and mix well. Add the spinach and chickpeas. Season with cumin, garlic powder, paprika, and salt. Cook for about 5-7 minutes, then remove from heat. In a separate bowl, mix the flour, chia seeds, baking powder, and salt. Add plant-based milk and vegan yogurt, whisking until smooth. Fold the cooked vegetables into the batter and mix well. Pour portions onto a lightly greased non-stick pan and cook over medium heat for 7-10 minutes.
