Ingredients: Cookie Base 1/2 cup all purpose flour 1 Tbsp granulated sugar 1/8 tsp salt 1/4 cup butter, salted, cold 3/4 Tbsp cold water Topping: 1/2 cup heavy whipping cream 1/2 cup granulated sugar 1/4 tsp almond extract 1/2 cup sliced almonds DIrections Preheat oven to 375 degrees F. and Line a 9 x 5 inch loaf pan with parchment paper. In a medium size bowl, mix together cookie base dry ingredients, flour, sugar, salt. Add in butter cut into small pieces. Use a pastry blender to incorporate butter until it resembles coarse meal. Add in cold water and u se a fork to mix dough until it comes together. Press dough into bottom of prepared loaf pan and bake for 15-20 minutes or until lightly golden brown. Remove from oven and turn oven down to 400 degrees F. Let base cool while mixing together the topping. In a small saucepan, mix together cream, sugar and extract over. medium heat until it comes to a rolling boil. Stir occasionally and boil for about 2-3 minutes. Remove from heat and add in almonds. Allow mixture to cool for 15 minutes. Pour warm topping over cookie base. Make sure almonds are evenly distributed. Bake for 20-25 minutes or until bars are golden brown around the edges and lightly golden brown in the middle. Allow to cool, run a knife aroound the edges to loosen them and cut into pieces after they are cool.
