Volume 12, Episode 3. George Egg is the Snack Hacker, demonstrating fast, easy, innovative ideas for tasty bites. Today George is joined by comedian, actor, writer and all round creative powerhouse Jamie Demetriou. Jamie loves preserved lemons and George shows him how to use them to turn a chicken and mushroom pie into something much more exciting. INGREDIENTS: 1 Chicken and Mushroom Pie 1 or 2 Preserved Lemons 6 or 7 Green Olives 1 tsp Fennel Seeds Black Pepper 1 Egg METHOD: Roughly chop up the lemon and olives. Toast the fennel seeds and give them a cursory grind/bash/chop. Carefully cut the lid off the pie where the join was and insert olives, lemon and sprinkles of fennel and black pepper until you feel you’ve enhanced enough. Then add a bit more lemon. Egg-wash the top of the pastry and re-attach the lid before egg-washing the top and sprinkling on a few more of the toasted seeds. Bake as per the instructions (for a Pukka Pie like I used it’s about 30 mins at 200ºC). Take it out, cut it open, if you have some give it a sprinkle with some fresh herbs (I used fennel tops and chives) and tuck in. It’s SO GOOD THIS ONE. SO GOOD. Jamie Demetriou is hugely prolific and you can find him in so many things from his own Stath Lets Flats to Fleabag to the new Barbie movie.
