Volume 10, Episode 1 George Egg is the Snack Hacker, demonstrating fast, easy, innovative ideas for tasty bites. A tenth volume finds George rustling up a very easy Shakshuka for one in a teacup. Its a delicious breakfast, a great low-carb snack, a spicy North African treat that takes seconds. INGREDIENTS: ¼ frozen garlic briquette (or just a small amount of crushed fresh garlic) ¼ tsp smoked paprika ¼ tsp ground cumin ¼ tsp sugar pinch of chilli flakes salt and pepper 3 tbsp chopped tinned tomatoes slug of EV olive oil 1 egg small nub of feta fresh parsley and or coriander fresh mint (or dried mint) squeeze of lemon METHOD: Mix the garlic, smoked paprika, cumin, sugar, chilli flakes, tinned tomatoes and olive oil together in a teacup with a pinch of salt and pepper and microwave for about 30-40 seconds. Crack the egg carefully into the cup trying to keep the yolk in the middle. Add a pinch of pepper, cover loosely with a bit of folded kitchen towel (in case it pops as it sometimes does) as microwave for another 30 or so seconds. It depends on the microwave and the egg size, but under a bit is better than over as it’ll carry on cooking. Crumble over the feta, lemon and fresh herbs.
