From my home to yours, enjoy! Donut Ingredients: 3 2/3 cups(255g) all-purpose flour 1 tbsp(14g) baking powder 1/4 tsp(1.5g) baking soda 1/2 tsp(3g) Kosher salt 1/2 tsp(1g) ground cinnamon 1/4 tsp(.5g) ground nutmeg 1/4 tsp(.5g) ground ginger 1/4 tsp(.5g) ground allspice 3/4 cup(150g) light brown sugar, packed 6 tbsp(85g) unsalted butter, softened to room temperature 2 large eggs 2 1/2 cups(590ml) apple cider 1 1/2 tsp(6g) vanilla extract Method: Over medium-high heat reduce apple cider to 1/3 its size. Once off the heat stir in vanilla. In a medium bowl whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and allspice and set aside. In a stand mixer or with a hand mixer begin creaming the brown sugar and butter till light and fluffy.(3-5 mins) Add eggs one at a time till completely combined and smooth. Alternate adding in the dry mixture and apple cider reduction in two parts. Once dough comes together cover with plastic wrap and place in the fridge for 8 hours up to overnight to firm up. Bring cooking oil(vegetable or canola) to 350 Fahrenheit(176 Celsius) Roll dough out to 1/2 inch thickness and cut with a biscuit cutter or round cookie cutter. Cut middle with smaller round cutter. Place in the hot oil and fry for 2-3 minutes per side. Remove to rack suspended above a paper towel lined tray and let set till cool to touch. Apple Cider Glaze Ingredients: I cup(236ml) apple cider 5 cups(625g) powdered/icing/confectioners sugar 2 tbsp(41g) light corn syrup Method: Over medium-high heat reduce apple cider by half. Combine cider, sugar, and corn syrup and stir till there are no lumps. Set aside to cool and thicken. Assembly: Dunk half of donut into glaze and let set, then dunk again for a second and third layer. *Optional: sprinkle with cinnamon sugar.
