Banana Bread Ingredients: 2 cups all-purpose flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp espresso powder Pinch of Kosher salt 2 large eggs + 1 large egg yolk 3 well-ripened bananas 1/2 cup unsalted butter, room-temperature 1 1/4 cup granulated sugar 1/2 tsp vanilla extract Method: Preheat oven to 350 Fahrenheit. In a large bowl sift all the dry ingredients; flour, baking powder and soda, espresso powder, and salt. Set aside Cream together butter and sugar till light and fluffy. Add eggs and vanilla extract to creamed mixture. Cut bananas into medallions and mix into wet mixture till completely smooth. Fold dry ingredients into wet mixture until just combined. Careful not to overmix here. Bake off for 50-60 minutes, and cool slightly. Maple Glaze Ingredients: 1/2 cup pure maple syrup 3 tbsp unsalted butter 1/2 cup powdered/confectioners/icing sugar Method: In a small pot over medium heat, melt butter and maple syrup together till homogenous. Bring mixture to a boil for 30-60 seconds and pull off the heat. Sift in powdered sugar and whisk vigorously till completely smooth. Assembly: Puncture bread with a knife several times along the top of the loaf. Pour maple glaze over and let set to completely cool. Enjoy!
