In a bowl, add the chicken, seasoning and oil. Mix to combine. 2. Place a pan over medium-high heat, spray lightly with oil, and sear the chicken in batches for 6-7 minutes or until cooked. Remove and repeat the remaining batches. 3. In the same pan, back over medium-high heat, add the butter, rice, and toast for 2 minutes to pick up the flavour left behind from the chicken. Add the spices and stock and mix well. Bring to a boil, reduce heat to low, place on a lid, and cook for 12 minutes. Turn off the heat, leave the lid on for 4 minutes, and fluff with a fork or spatula. 4. Add all the tzatziki ingredients in a bowl and mix well. 5. Place the rice on one side and the chicken on the other in 5x 750ml meal prep containers. Drizzle the tzatziki over the top or serve on the side in a separate container.
