Happy Valentines Day! 🥰 #ValentinesDay #ValentinesDay2026 #dinner EGGPLANT PARMESAN Ingredients: 2 Large Eggplants 2 Large Eggs 1/4 cup Milk 1 1/2 Cup Panko Breadcrumbs 1 1/4 Cup Parmesan Cheese 2 Teaspoons Oregano 2 Tablespoons Thyme 1/2 Teaspoon Red Pepper Flakes 1/2 Teaspoon Salt Pepper Olive Oil 28 Oz Marinara Sauce Fresh Mozzarella- Large pre-sliced log 1/3 Cup Basil leaves Directions: Pre-Heat oven to 400 degrees Line 2 Baking sheets with Parchment paper Slice Eggplant into 1/4 inch slices In Medium dish whisk eggs and milk together. In another Medium dish combine: Bread crumbs, 1 cup Parmesan cheese, Oregano, Thyme, Red Pepper Flakes, Salt and several dashes of Black Pepper. Dip the eggplant into the egg and milk mixture, then into the Panko mixture, and place on baking sheet. Drizzle eggplant with Olive Oil and bake for 18 minutes. In a greased 9x13 casserole dish, lightly cover the bottom with marinara sauce, then 1/2 of the Eggplant, then 1 cup of Marinara, and 1/2 the Mozzarella. Repeat with the remaining eggplant, the remaining Marinara, and remaining Mozzarella. Sprinkle the top with the remaining 1/4 cup of Parmesan cheese, drizzle with Olive Oil and sprinkle with a little salt. Bake for 20 minutes until cheese is bubbly. Top with Basil and serve.
